Best Noodles Ever Had

4.10.11 - On my bed now @ 12.35am, listening to radio 988 to DJ Chan Fong in a very good mood. Cant sleep because too happy. TH told me just now before he snoozed off that this morning, our little gal told him that she wants a big bowl of chan hin mee for dinner today. By the way, TH had dinner appointment outside, so I made chan hin mee for dinner. The gal told TH that the chan hin mee that I make is the best noodles she ever had before. Wow, that's encouraging! What a sweet compliment from a 10 year old gal and the fact that she didnt say it to me but to TH means she meant it. This compliment is so memorable that every time I cook this noodle, I will naturally put in my effort to keep my standard.

True enough, that night when she returned from tuition, she asked me to prepare a large bowl for her. She also requested to be given the remaining pork mince because I have mentioned before that the oil from the remaining pork mince will make the noodle oilier and taste better. So, I prepared a rather big portion for her and she finished it all. Then, she said very delicious and asked me if the extra oil in the remaining pork mince will make her fat, hehehe..... cute!

Well, JS likes this noodle too but just not as expressive as the gal. It is mom recipe. This again proves mom is truly the world's best chef because she has one secret ingredient and that is LOVE. Mom used to prepare this for dad. Mom must be very proud of me because I succeeded in passing down a good recipe. This noodles reminds me of mom and I will continue to cook this noodle in memory of her, always and forever......
